Grilled zucchini + watermelon salad

Watermelon has got to be one of my absolute favourite summer fruits. It reminds me of sunshine and family barbecues and long hot days sunbaking on the beach, sneaking watermelon from the esky. Not only is this sweet, juicy fruit deliciously refreshing, it is also packed with antioxidant goodness. It is a rich source of phenolic compounds, such as flavonoids, triterpenoids and carotenoids; in particular, lycopene, which is known for it's anti-inflammatory benefits. Add to that the vitamin A and iron content of the mint and this sumptuous summer salad is a health-promoting party in your mouth.
GRILLED ZUCCHINI, WATERMLON AND MINT SALAD
VEGAN* | GF | LOW FAT | LOW CARB
Serves 2
WHAT YOU'LL NEED
1 large zucchini, halved and thinly sliced (lengthways)
1/4 fresh watermelon
200 g mixed spinach and rocket leaves
Large handful fresh mint, roughly torn
150 g Danish feta*
Dressing
Extra-virgin olive oil
Cracked pepper
Sea salt
Balsamic glaze
HOW TO MAKE IT
Heat a non-stick griddle pan oner medium heat. Arrange zucchini and grill until charred and soft. Flip and repeat on the opposite site. Transfer to a large bowl.
Remove skin and dice watermelon into medium-sized cubes.
Add to the bowl along with the spinach, rocket and mint, and crumble feta over the top.
Drizzle about a tbsp each of olive oil and balsamic vinegar.
Season with salt and peper and toss to combine.
*Omit feta for vegan option.
