Clean chickpea carob truffles

If you're after a quick and easy work snack or on-the-go breakfast, look no further than these paleo chickpea carob truffles. Not only are chickpeas high in protein and dietary fibre - which makes these little balls perfect for when those afternoon sugar cravings they, they also contain coconut oil for healthy fats, chia seeds for extra protein, baobab for vitamin C and carob powder for essential minerals such as calcium, potassium, folate and magnesium.
CHICKPEA CAROB TRUFFLES
MAKES 20
WHAT YOU'LL NEED
1 x tin chickpeas, drained and rinsed
300 g almond meal
2 tbsp chia seeds
2 tbsp baobab powder
1 tbs cacao nibs
60 g raw vanilla protein (we used this Four Protein in Vanilla Bean)
Pinch salt
2 tbsp coconut oil
1 tsp vanilla extract
Carob powder, for dusting (we love Organic Times)
HOW TO:
Place chickpeas in a food processor and process until smooth.
Mix dry ingredients -except carob powder - together in a bowl, add chickpeas, coconut oil and vanilla essence.
Use hands to mix until a dough forms.
Roll into balls then dust with carob powder.
*These will keep in the fridge for about a week, or in the freezer for a month.
