Paleo breakfast bruschetta

Make mornings interesting with this grain-free breakfast bruschetta. All you need is some paleo bread (we love Lola Berry's paleo pumpkin bread from The Happy Cookbook).

Fast, tasty, and easy as.

PALEO BREAKFAST BRUSCHETTA

WHAT YOU'LL NEED:

2 slices paleo bread

1 tomato, sliced

6 cherry bocconcini, halved

Tbsp toasted pinenuts

Drizzle extra-virgin olive oil

Handful fresh parsley

Drizzle black tahini

Tasp chia seeds

Sea salt and cracked pepper

How to make it:

Preheat grill.

Toast bread, drizzle with a little olive oil then add a layer of tomato and halved bocconcini on top. Place under preheated grill until tomato is starting to soften and bocconicini has melted.

Remove from heat. Drizzle with a little extra EVOO and the tahnini. Sprinkle with chia seeds and parsley. Season with salt and pepper and enjoy.
