Burnt pineapple pops


When it comes to fruit, summer is the ultimate season. These golden months provide endless options for sweet, nutritious desserts that are not only better for you, but friendly on the wallet, too.

INGREDIENTS

1 pineapple, cut into slices

1 tsp unrefined coconut oil

1 block Loving Earth Salted Chocolate

Handful crushed peanuts, toasted

Handful cacao nibs

Fresh mint

METHOD

Heat a griddle pan over medium-high heat, then add coconut oil.

Add sliced pineapple to the pan and grill for one minute, or until soft. Flip and repeat on reverse side.

Melt chocolate over a couble boiler. Dip pineapple into chocolate then transfer to a foil-lined baking tray.

Sprinkle with toasted peanuts, cacao nibs and mint.

Set in fridge, then enjoy.
