Grilled zucchini, tomato and bacon salad

After a cheap and easy mid-week dinner? This quick and simple summer salad is not only budget friendly, but takes less than 10 minutes to whip up.
INGREDIENTS
1 zucchini, halved and thinly sliced
10 cherry tomatoes, halved
1 slice short cut nitrate-free bacon, diced
Handful pine nuts
Drizzle olive oil
Drizzle apple cider vinegar
Sea salt and cracked pepper, to taste
METHOD
Heat a griddle pan over medium-high heat. Once hot, add a splash of olive oil.
Place sliced zucchini in pan and grill until charred and soft. Flip and repeat on opposite side. Transfer to a bowl to cool.
Add diced bacon to the griddle pan and fry until starting to crisp. Add pine nuts and cook for a couple of minutes more.
Transfer all ingredients to a bowl. Drizzle with olive oil and apple cider vinegar. Season with salt and pepper. Serve and enjoy.
